Acacia gum shows good stability in low pH foods hence it is frequently employed as an emulsifying agent in the manufacture of intense citrus and cola flavor oils that are used in soft drinks. The gum may prevent the flocculation and agglomerates of the oil droplets for long period of time, and when the dispersion is diluted up to 500 times with sweetened carbonated water before bottling, it retains its stability for up to a year. For attaining the density of the finished beverage and prevention of creaming, a weighing agent is often added to the oil during the creation of the emulsion. The use of these agents is governed by certain regulations of that region or country.
